  1. Grate cucumber; squeeze out excess water.
  2. Heat oil in small pan; add cumin seeds (30 sec, 120°C).
  3. Add ginger, green chillies; sauté 20 sec.
  4. Cool slightly.
  5. Mix grated cucumber, coconut, spiced oil, lemon juice, salt, coriander.
  6. Color pale green with white coconut, texture fine and moist, aroma fresh-spiced.
