👩🍳 How to make Jholi Puri
- Mix flour, turmeric, salt; add oil, yogurt, water (50ml) to form dough.
- Knead 5 min; rest 10 min.
- Roll into balls, flatten to 3mm; rest 5 min.
- Heat oil to 180°C; fry puris until golden and puffed (1 min per side).
- Drain on paper.
- Heat oil (30ml); add onions, fry until golden (2 min, 170°C).
- Add ginger-garlic paste; sauté 1 min.
- Add tomatoes, turmeric, chilli, coriander; cook 3 min until soft.
- Add fish, salt; simmer 8 min until cooked through.
- Color russet-red, fish flakes easily, oil separates on top.
