👩‍🍳 How to make Jholi Puri

  1. Mix flour, turmeric, salt; add oil, yogurt, water (50ml) to form dough.
  2. Knead 5 min; rest 10 min.
  3. Roll into balls, flatten to 3mm; rest 5 min.
  4. Heat oil to 180°C; fry puris until golden and puffed (1 min per side).
  5. Drain on paper.
  6. Heat oil (30ml); add onions, fry until golden (2 min, 170°C).
  7. Add ginger-garlic paste; sauté 1 min.
  8. Add tomatoes, turmeric, chilli, coriander; cook 3 min until soft.
  9. Add fish, salt; simmer 8 min until cooked through.
  10. Color russet-red, fish flakes easily, oil separates on top.
