- Heat oil to 160°C; add mustard seeds (40 sec).
- Add curry leaves, green chillies; sauté 20 sec.
- Add onions; fry until golden (1.5 min, 170°C).
- Add goda masala, turmeric, chilli powder; fry 30 sec.
- Add remaining vegetables, salt; cook 8 min until vegetables soft (170°C).
- Stir occasionally; cook until water evaporates.
- Color brown-gold with visible spice bits, texture soft and cooked, aroma aromatic.
- Garnish with coriander.
