👩‍🍳 How to make Goda Masala Bhaji

  1. Heat oil to 160°C; add mustard seeds (40 sec).
  2. Add curry leaves, green chillies; sauté 20 sec.
  3. Add onions; fry until golden (1.5 min, 170°C).
  4. Add goda masala, turmeric, chilli powder; fry 30 sec.
  5. Add remaining vegetables, salt; cook 8 min until vegetables soft (170°C).
  6. Stir occasionally; cook until water evaporates.
  7. Color brown-gold with visible spice bits, texture soft and cooked, aroma aromatic.
  8. Garnish with coriander.
