👩🍳 How to make Dhokli
- Knead flour, salt, turmeric, oil, water into soft dough (5 min); rest 10 min.
- Roll thin (3mm); cut into 3cm strips; roll strips into loose spirals.
- Heat oil to 170°C; add onions, fry until golden (1.5 min).
- Add ginger-garlic, green chillies; sauté 30 sec.
- Add tomatoes, turmeric; cook 2 min until soft.
- Add dal, water, salt; bring to boil.
- Add dhokli spirals one by one; stir gently.
- Cook 8 min until dhokli float and dal cooked.
- Color amber-gold, dhokli soft, dal creamy.
