- Heat oil to 170°C; add mustard seeds (40 sec).
- Add curry leaves, green chillies; sauté 20 sec.
- Add onions; fry until golden (2 min, 170°C).
- Add ginger-garlic; sauté 1 min.
- Add tomatoes, turmeric, chilli, coriander; cook 3 min until soft.
- Add crabs, salt; stir-fry 3 min.
- Add coconut milk; simmer 12 min until crab meat cooked.
- Color reddish-gold, crab shells red, sauce thick and creamy.
