- Heat oil to 160°C; add mustard seeds, chana dal (40 sec).
- Add curry leaves, green chillies; sauté 20 sec.
- Add onions; fry until soft (1.5 min, 170°C).
- Add corn; fry 1 min.
- Add turmeric, salt, water; bring to boil.
- Slowly add semolina, stirring constantly.
- Reduce heat; cook 6 min until liquid absorbed, texture fluffy.
- Color golden with corn kernels, texture light and fluffy, aroma sweet-savory.
