- Heat ghee to 150°C; add coconut; fry 3 min until golden, stirring often.
- Add cashews, raisins; fry 1 min until golden.
- Dissolve sugar in water; add to coconut mixture.
- Cook 8 min on medium heat (150°C), stirring constantly until moisture evaporates.
- Add cardamom; mix well.
- Remove from heat; halwa should be moist but hold shape.
- Color golden-brown, texture dense and moist, aroma sweet-nutty.
