- Heat ghee to 150°C; add almonds, cashews; fry until golden (1 min).
- Add raisins; fry 30 sec.
- Remove; set aside.
- Add grated carrots to same ghee; cook 8 min, stirring often, on 150°C until moisture reduces.
- Add milk; cook 8 min.
- Add jaggery, cardamom; cook 5 min until creamy.
- Add fried nuts.
- Color deep orange, texture creamy and dense, aroma sweet-nutty.
