  1. Heat ghee to 150°C; add almonds, cashews; fry until golden (1 min).
  2. Add raisins; fry 30 sec.
  3. Remove; set aside.
  4. Add grated carrots to same ghee; cook 8 min, stirring often, on 150°C until moisture reduces.
  5. Add milk; cook 8 min.
  6. Add jaggery, cardamom; cook 5 min until creamy.
  7. Add fried nuts.
  8. Color deep orange, texture creamy and dense, aroma sweet-nutty.
