- Heat ghee; temper mustard seeds, chana dal (40 sec, 150°C).
- Add curry leaves, green chillies, turmeric; sauté 30 sec.
- Add peanuts, coconut; fry 1 min until fragrant.
- Add cooked rice; mix well (1 min, 160°C).
- Dissolve tamarind in 100ml warm water; add to rice.
- Stir gently, cook 2 min until rice absorbs tamarind liquid.
- Color brown-gold, aroma tangy-nutty, each grain coated.
