- Mix flour, salt; add oil, yogurt, water; knead (5 min).
- Rest 10 min.
- Heat oil; fry onions until golden (1.5 min, 170°C).
- Add ginger, green chillies; sauté 30 sec.
- Add mashed potatoes, turmeric, chilli powder, salt; cook 2 min.
- Cool.
- Divide dough into 4 balls; flatten.
- Place filling in center; seal edges.
- Roll gently to 8mm thickness.
- Deep-fry at 180°C until golden (2 min per side).
- Color bronze-gold, texture soft inside, crispy outside, aroma spiced.
