👩‍🍳 How to make Aloo Puri

  1. Mix flour, salt; add oil, yogurt, water; knead (5 min).
  2. Rest 10 min.
  3. Heat oil; fry onions until golden (1.5 min, 170°C).
  4. Add ginger, green chillies; sauté 30 sec.
  5. Add mashed potatoes, turmeric, chilli powder, salt; cook 2 min.
  6. Cool.
  7. Divide dough into 4 balls; flatten.
  8. Place filling in center; seal edges.
  9. Roll gently to 8mm thickness.
  10. Deep-fry at 180°C until golden (2 min per side).
  11. Color bronze-gold, texture soft inside, crispy outside, aroma spiced.
