  1. Soak rice, urad dal, fenugreek 4 hours.
  2. Grind to smooth batter with salt and water (30 mins).
  3. Rest batter 6 hours.
  4. Heat griddle to high (150°C).
  5. Pour batter, spread thin.
  6. Sprinkle vegetables, green chilies.
  7. Cook 2 mins until golden, flip, cook 1 min.
  8. Visual cue: crispy edges, soft center.
