- Heat oil in heavy-bottomed pot, add cumin seeds (30 secs).
- Add ginger, green garlic, cook 1 min (medium heat).
- Add all vegetables, cook 3-4 mins, stirring.
- Add turmeric, chili powder, salt, garam masala, water.
- Cover, reduce to low (65°C), cook 20-25 mins, stirring occasionally.
- Add coconut, coriander in last min.
- Visual cue: vegetables very soft, creamy texture, fragrant.
- Serve with rice or bread.
- Heat level: medium.
