  1. Heat oil in heavy-bottomed pot, add cumin seeds (30 secs).
  2. Add ginger, green garlic, cook 1 min (medium heat).
  3. Add all vegetables, cook 3-4 mins, stirring.
  4. Add turmeric, chili powder, salt, garam masala, water.
  5. Cover, reduce to low (65°C), cook 20-25 mins, stirring occasionally.
  6. Add coconut, coriander in last min.
  7. Visual cue: vegetables very soft, creamy texture, fragrant.
  8. Serve with rice or bread.
  9. Heat level: medium.
