  1. Mix all flours with salt, onions, chilies.
  2. Add water gradually to stiff dough (2 mins).
  3. Divide into 3 balls.
  4. Heat griddle to high (120°C).
  5. Wet hands, slap dough directly onto griddle, flatten to 5-inch circle.
  6. Cook 1.5 mins, flip, cook 1 min.
  7. Brush oil.
  8. Visual cue: light brown, puffed.
  9. Serve 1 per person, hot.
