- Soak tamarind in hot water (100°C) for 10 mins, strain to get pulp.
- Blend soaked dates with jaggery and water to smooth paste.
- Mix tamarind pulp, date paste, roasted cumin, chili, salt.
- Simmer on low heat (70°C) for 8-10 mins, stirring, until thick and glossy.
- Cool.
- Visual cue: thick paste, dark brown, sweet-sour taste.
- Store in jar.
- Heat level: low.
