  1. Soak tamarind in hot water (100°C) for 10 mins, strain to get pulp.
  2. Blend soaked dates with jaggery and water to smooth paste.
  3. Mix tamarind pulp, date paste, roasted cumin, chili, salt.
  4. Simmer on low heat (70°C) for 8-10 mins, stirring, until thick and glossy.
  5. Cool.
  6. Visual cue: thick paste, dark brown, sweet-sour taste.
  7. Store in jar.
  8. Heat level: low.
