  1. Soak rice 2 hours, urad dal 2 hours, grind with salt and ½ cup water to smooth batter (30 min grinding time).
  2. Let batter rest 4-6 hours (room temperature 25°C).
  3. Grease idli molds with oil.
  4. Pour batter into molds.
  5. Steam in closed vessel with water for 10 mins (steam 100°C).
  6. Visual cue: toothpick comes clean, cake springs back.
  7. Serve warm with green chutney.
