- Heat oil, add mustard seeds, cumin seeds (30 secs).
- Add asafoetida, onions, ginger, chilies (1 min).
- Add carrots, peas, cook 1 min.
- Add semolina, toast 2 mins (stirring, medium heat).
- Add water, salt, bring to boil (100°C).
- Reduce to low (65°C), cover, cook 5-7 mins.
- Visual cue: water absorbed, fluffy texture.
- Serve hot.
