- Make rotis: knead flour with water and salt (2 mins).
- Divide into 5 balls.
- Heat griddle to high (120°C).
- Roll to 7-inch circle (3mm).
- Cook 1 min, flip, cook 45 secs, brush oil.
- For vegetables: heat oil, add cumin seeds, ginger, chilies (45 secs).
- Add vegetables, turmeric, salt, cook 5-7 mins on medium-high heat (90°C) until just tender.
- Add lemon juice.
- Serve 1 roti per person with vegetable portion.
