  1. Make rotis: knead flour with water and salt (2 mins).
  2. Divide into 5 balls.
  3. Heat griddle to high (120°C).
  4. Roll to 7-inch circle (3mm).
  5. Cook 1 min, flip, cook 45 secs, brush oil.
  6. For vegetables: heat oil, add cumin seeds, ginger, chilies (45 secs).
  7. Add vegetables, turmeric, salt, cook 5-7 mins on medium-high heat (90°C) until just tender.
  8. Add lemon juice.
  9. Serve 1 roti per person with vegetable portion.
