  1. Boil chickpeas until soft (15 mins), drain well, pat dry.
  2. Heat oil, add mustard, cumin seeds (30 secs).
  3. Add asafoetida, turmeric, chili powder (10 secs).
  4. Add dry chickpeas, salt, cook 10-12 mins on medium heat (85°C), stirring frequently until completely dry and crunchy.
  5. Visual cue: completely dry, crunchy texture.
  6. Cool completely.
  7. Store in airtight jar.
