  1. Mix diced mango with salt, let sit 3 hours.
  2. Heat oil, add mustard seeds, fenugreek (30 secs), add asafoetida (10 secs).
  3. Add turmeric, chili powder, cook 30 secs (90°C).
  4. Add mango mixture, stir well.
  5. Cool and store in glass jar.
  6. Ferment 4-5 days at room temperature before use.
  7. Visual cue: mangoes slightly softened, pickled flavor.
  8. Keep 2-3 months.
