- Boil water with salt in heavy pan (100°C).
- Slowly whisk ragi flour into water avoiding lumps (constant stirring 2 mins).
- Reduce to low heat (70°C).
- Add oil, cumin seeds, asafoetida.
- Stir in ginger, chilies, carrots, peas.
- Cover, cook 8-10 mins, stirring every 2 mins.
- Visual cue: thick porridge, vegetables soft.
- Serve hot with jaggery on side.
