  1. Heat oil, add mustard seeds, cumin seeds, chilies (30 secs).
  2. Add rice, turmeric, green papaya, salt, water.
  3. Bring to boil (100°C), reduce to low (65°C), cover, cook 20 mins.
  4. Visual cue: papaya tender, rice soft.
