  1. Mix flours, fenugreek, ginger, chilies, turmeric, salt.
  2. Add water gradually to soft dough (2 mins).
  3. Shape into long rolls (5cm) between palms.
  4. Steam on oiled tray for 15-18 mins (steam 95°C).
  5. Cool, cut into 2cm pieces.
  6. Heat oil, add cumin seeds, asafoetida (20 secs), temper muthia pieces.
  7. Visual cue: dumplings cooked through, light golden.
  8. Serve warm.
