- Mix flours, fenugreek, ginger, chilies, turmeric, salt.
- Add water gradually to soft dough (2 mins).
- Shape into long rolls (5cm) between palms.
- Steam on oiled tray for 15-18 mins (steam 95°C).
- Cool, cut into 2cm pieces.
- Heat oil, add cumin seeds, asafoetida (20 secs), temper muthia pieces.
- Visual cue: dumplings cooked through, light golden.
- Serve warm.
