  1. Soak rice, urad dal 3 hours.
  2. Grind with sprouted moong, salt, water to batter (25 mins).
  3. Rest 2 hours.
  4. Heat griddle to high (150°C).
  5. Pour batter, spread thin.
  6. Sprinkle chilies.
  7. Cook 2 mins, flip, cook 1 min.
  8. Visual cue: crispy, cooked through.
  9. Serve hot with sambar.
