  1. Soak moong dal and rice 3 hours.
  2. Grind with salt, water to smooth batter (20 mins).
  3. Rest 2 hours.
  4. Heat griddle to high (150°C).
  5. Pour batter, spread thin.
  6. Sprinkle cumin seeds, chilies, ginger.
  7. Cook 1.5 mins, flip, cook 45 secs.
  8. Visual cue: crispy, light brown.
  9. Serve with chutney.
