  1. Rotis: mix jowar and bajra flour with water and salt (2 mins).
  2. Divide into 4 balls.
  3. Heat griddle to high (115°C).
  4. Roll to 6-inch circle.
  5. Cook 1 min, flip, 45 secs, brush oil.
  6. For dal: heat oil, add mustard seeds, ginger (30 secs).
  7. Add dal, bottle gourd, turmeric, salt, water.
  8. Bring to boil (100°C), reduce to low (65°C), cover, cook 20-25 mins until both soft.
  9. Serve 1 roti per person with dal.
  10. Visual cue: rotis puffed, dal creamy.
