- For rice: heat oil, add mustard seeds, cumin seeds (30 secs).
- Add onions (1 min).
- Add rice, methi, turmeric, salt, water.
- Bring to boil (100°C), reduce to low (65°C), cover, cook 18-20 mins.
- For dal: boil moong dal with water, salt, ginger (15 mins at 70°C) until soft.
- Serve methi rice with simple dal on side.
- Visual cue: rice fragrant with methi, dal creamy.
