👩‍🍳 How to make Lilva Kachori

  1. Dough: knead flour, salt, oil, water (3 mins), rest 30 mins.
  2. Filling: cook pigeon peas with turmeric, salt (10 mins), mash.
  3. Heat 5ml oil, add cumin, ginger, chilies (30 secs), mix into peas.
  4. Divide dough into 8 balls.
  5. Roll to thin circle (4-inch), place 1 tbsp filling in center, fold and seal edges.
  6. Heat oil to 170°C.
  7. Fry 2-3 mins per side until golden brown.
  8. Visual cue: crispy, golden, filling set.
  9. Serve warm.
