  1. Mix flours, salt, chili, turmeric, cumin.
  2. Add oil, rub in (30 secs).
  3. Add water gradually, knead soft dough (3 mins).
  4. Divide into 8 balls.
  5. Roll extremely thin between cloth (2mm).
  6. Heat griddle to medium (100°C).
  7. Cook on very low heat (60°C) for 2-3 mins per side, pressing gently with cloth until crispy.
  8. Store in airtight container.
  9. Visual cue: very crispy, light brown.
  10. Heat level: low.
