- Mix flours, salt, chili, turmeric, cumin.
- Add oil, rub in (30 secs).
- Add water gradually, knead soft dough (3 mins).
- Divide into 8 balls.
- Roll extremely thin between cloth (2mm).
- Heat griddle to medium (100°C).
- Cook on very low heat (60°C) for 2-3 mins per side, pressing gently with cloth until crispy.
- Store in airtight container.
- Visual cue: very crispy, light brown.
- Heat level: low.
