👩‍🍳 How to make Jaggery Rice Pudding

  1. Rinse rice and dal.
  2. Heat 10ml ghee, add cardamom, cinnamon (30 secs).
  3. Add rice and dal, toast 2 mins (medium heat 80°C).
  4. Add water, salt, bring to boil (100°C), reduce to low (65°C), cover, cook 20-25 mins.
  5. When rice is very soft, add milk, remaining 5ml ghee, jaggery.
  6. Stir gently until jaggery dissolved.
  7. Heat remaining ghee, fry cashews and raisins (1 min at 90°C), add to rice.
  8. Visual cue: creamy, golden, aromatic.
  9. Serve warm.
  10. Heat level: low.
