👩🍳 How to make Jaggery Rice Pudding
- Rinse rice and dal.
- Heat 10ml ghee, add cardamom, cinnamon (30 secs).
- Add rice and dal, toast 2 mins (medium heat 80°C).
- Add water, salt, bring to boil (100°C), reduce to low (65°C), cover, cook 20-25 mins.
- When rice is very soft, add milk, remaining 5ml ghee, jaggery.
- Stir gently until jaggery dissolved.
- Heat remaining ghee, fry cashews and raisins (1 min at 90°C), add to rice.
- Visual cue: creamy, golden, aromatic.
- Serve warm.
- Heat level: low.
