👩‍🍳 How to make Jaggery and Sesame Fudge

  1. Dry roast sesame seeds on low heat (70°C) for 2-3 mins until fragrant.
  2. Melt jaggery in heavy-bottomed pan on low heat (60°C) for 3-4 mins, stirring.
  3. Add roasted sesame quickly, mix thoroughly (stirring constantly 1 min).
  4. Pour onto ghee and oil-coated tray, flatten slightly with back of spoon.
  5. Cool 15-20 mins.
  6. Break into pieces when firm.
  7. Visual cue: crispy, golden, set.
  8. Store in airtight jar.
  9. Heat level: low.
