- Dry roast sesame seeds on low heat (70°C) for 2-3 mins until slightly darker and fragrant.
- Melt jaggery in separate pan on low heat (60°C) for 3-4 mins.
- Add roasted sesame to melted jaggery, mix quickly and thoroughly (stirring constantly).
- Pour onto oiled tray, flatten slightly, cool 10-15 mins.
- Break into pieces when firm.
- Visual cue: crispy brittle, golden color.
- Store in airtight jar.
- Heat level: low.
