  1. Prepare idli batter (soak rice, urad dal 4 hrs, grind 30 mins, rest 6 hrs).
  2. Steam in molds 10 mins.
  3. For sambar: boil toor dal, vegetables with tamarind and salt (15 mins).
  4. Heat oil, add mustard, cumin seeds, pour into sambar.
  5. Serve 2 idlis per person with sambar hot (70°C).
