- Heat oil, add cumin seeds, onions (2 mins, golden).
- Add ginger, chilies, tomatoes, cook 1 min.
- Mix gram flour with 100ml water to smooth paste.
- Slowly add to pan while stirring to avoid lumps.
- Add turmeric, chili powder, salt, remaining water.
- Cook on low heat (70°C) for 10-12 mins, stirring often.
- Add coriander.
- Should be medium thick gravy.
- Serve with rice.
