- Rinse buckwheat.
- Heat ghee in pot, add asafoetida, ginger (30 secs fragrant).
- Add buckwheat, toast 2 mins (medium heat).
- Add water, salt.
- Bring to boil (100°C), reduce to low (70°C), cover, cook 15-18 mins.
- Stir in jaggery.
- Visual cue: grains tender, porridge creamy.
- Serve hot with ghee on top.
