  1. Rinse black rice.
  2. Heat ghee, add cardamom (30 secs).
  3. Add rice, salt, water.
  4. Bring to boil (100°C), reduce to low (65°C), cover, cook 25-30 mins.
  5. Stir in jaggery, coconut milk, cook 2 mins.
  6. Visual cue: deep purple-black, creamy.
  7. Serve hot.
