  1. Salt bitter gourd slices, let sit 10 mins, squeeze lightly.
  2. Heat oil, add mustard seeds, asafoetida (30 secs).
  3. Add bitter gourd, cook 2 mins.
  4. Add rice, turmeric, salt, water.
  5. Bring to boil (100°C), reduce to low (65°C), cover, cook 18-20 mins.
  6. Visual cue: rice soft, gourd tender.
  7. Serve hot.
