👩‍🍳 How to make Bitter Gourd and Potato Curry

  1. Salt bitter gourd slices, let sit 10 mins, squeeze lightly.
  2. Heat oil, add cumin seeds, onions (1.5 mins).
  3. Add ginger, chilies, cook 30 secs.
  4. Add potatoes, cook 2 mins.
  5. Add bitter gourd, turmeric, chili powder, salt, water.
  6. Bring to boil (100°C), reduce to low (70°C), cover, cook 15-18 mins until both vegetables tender.
  7. Add jaggery if using.
  8. Serve with rice.
  9. Visual cue: potatoes soft, gourd tender.
