- Salt bitter gourd slices, let sit 10 mins, squeeze lightly.
- Heat oil, add cumin seeds, onions (1.5 mins).
- Add ginger, chilies, cook 30 secs.
- Add potatoes, cook 2 mins.
- Add bitter gourd, turmeric, chili powder, salt, water.
- Bring to boil (100°C), reduce to low (70°C), cover, cook 15-18 mins until both vegetables tender.
- Add jaggery if using.
- Serve with rice.
