- Make bajra roti: mix flour, water, salt, knead 2 mins.
- Divide into 4 balls.
- Heat griddle to medium-high (115°C).
- Roll to 6-inch circle (4mm).
- Cook 1 min, flip, cook 45 secs, brush oil.
- For curry: heat oil, add cumin seeds, onions (1.5 mins).
- Add ginger, chilies, bottle gourd, cook 2 mins.
- Add turmeric, chili powder, salt, water.
- Bring to boil (100°C), reduce to low (70°C), cover, cook 15-18 mins until gourd very soft.
- Add coriander.
- Serve 1 roti per person with curry portion.
- Visual cue: roti light and puffed, gourd dissolved into curry.
