  1. Make bajra roti: mix flour, water, salt, knead 2 mins.
  2. Divide into 4 balls.
  3. Heat griddle to medium-high (115°C).
  4. Roll to 6-inch circle (4mm).
  5. Cook 1 min, flip, cook 45 secs, brush oil.
  6. For curry: heat oil, add cumin seeds, onions (1.5 mins).
  7. Add ginger, chilies, bottle gourd, cook 2 mins.
  8. Add turmeric, chili powder, salt, water.
  9. Bring to boil (100°C), reduce to low (70°C), cover, cook 15-18 mins until gourd very soft.
  10. Add coriander.
  11. Serve 1 roti per person with curry portion.
  12. Visual cue: roti light and puffed, gourd dissolved into curry.
