  1. Heat oil, add cumin seeds, ginger (30 secs).
  2. Add rice, toast 1 min.
  3. Add ash gourd, turmeric, salt, water.
  4. Bring to boil (100°C), reduce to low (65°C), cover, cook 20-25 mins.
  5. Visual cue: gourd very soft, rice tender.
  6. Serve hot.
