  1. Dry roast amaranth 2 mins (medium heat, 80°C) until pops slightly.
  2. Heat ghee, add cardamom (30 secs).
  3. Add roasted amaranth, toast 1 min.
  4. Add water, salt, bring to boil (100°C), reduce to low (65°C), cover, cook 15-18 mins.
  5. Add milk, jaggery.
  6. Cook 3 mins.
  7. Visual cue: grains cooked, creamy.
  8. Serve hot.
