- Dry roast amaranth 2 mins (medium heat, 80°C) until pops slightly.
- Heat ghee, add cardamom (30 secs).
- Add roasted amaranth, toast 1 min.
- Add water, salt, bring to boil (100°C), reduce to low (65°C), cover, cook 15-18 mins.
- Add milk, jaggery.
- Cook 3 mins.
- Visual cue: grains cooked, creamy.
- Serve hot.
