  1. Thread vegetables onto 8 skewers alternately.
  2. Brush with oil, salt, pepper, lemon.
  3. Grill in oven at 220°C for 12-15 mins, turning once.
  4. Or pan-grill on cast iron 4-5 mins per side.
  5. Mix peanut butter with coconut milk, soy sauce, lemon, garlic, green chilli, sugar, water.
  6. Heat gently to 120°C. Whisk until smooth.
  7. Simmer 3 mins.
