- Thread vegetables onto 8 skewers alternately.
- Brush with oil, salt, pepper, lemon.
- Grill in oven at 220°C for 12-15 mins, turning once.
- Or pan-grill on cast iron 4-5 mins per side.
- Mix peanut butter with coconut milk, soy sauce, lemon, garlic, green chilli, sugar, water.
- Heat gently to 120°C. Whisk until smooth.
