👩🍳 How to make Vegetable Pulao
- Soak rice 30 mins. Heat ghee at 160°C. Add 1/3 of onions, fry until golden. Remove.
- Add cumin seeds (crackle 15 seconds), bay leaves, cinnamon, cloves, cardamom.
- Add remaining onions, sauté 2 mins. Add ginger, green chillies, cook 30 seconds.
- Add vegetables, sauté 2 mins. Add rinsed rice, sauté 2 mins.
- Add water, salt. Bring to boil, cover.
- Reduce to low heat (120°C), cook 15-18 mins.
- Each grain should be separate and tender.
- Top with fried onions, coriander.
