👩‍🍳 How to make Thinai Porridge

  1. Rinse millet well. Toast at 120°C for 3 mins. Cool.
  2. Heat water at 100°C, add millet. Cook 8-10 mins until millet is 70% cooked.
  3. Add milk, bring to simmer. Add jaggery, stir well.
  4. Cook on low heat (120°C) for 5-6 mins until millet is fully cooked and soft.
  5. Add ghee, cardamom, dry fruits. Mix gently.
  6. Serve hot in bowl. Consistency should be creamy.
