  1. Mix all dry flours and roasted dal powder with salt.
  2. Add chopped onions, green chillies, ginger, coriander, cumin.
  3. Bind with water into medium dough. Rest 10 mins.
  4. Divide into 4 portions. Wet hands, form 6-inch round discs directly on griddle.
  5. Heat griddle to 190°C. Place thalipeeth, fry 3 mins on low-medium heat.
  6. Flip, add oil around edges, fry 2-3 mins until both sides are crispy and golden.
  7. Press gently during cooking for crispness.
