- Mix all dry flours and roasted dal powder with salt.
- Add chopped onions, green chillies, ginger, coriander, cumin.
- Bind with water into medium dough. Rest 10 mins.
- Divide into 4 portions. Wet hands, form 6-inch round discs directly on griddle.
- Heat griddle to 190°C. Place thalipeeth, fry 3 mins on low-medium heat.
- Flip, add oil around edges, fry 2-3 mins until both sides are crispy and golden.
- Press gently during cooking for crispness.
