- Mix yogurt, ginger-garlic, red chilli, turmeric, lemon, salt, oil.
- Coat fish fillets. Marinate 30 mins.
- Preheat oven to 220°C. Bake for 15-18 mins until cooked through.
- Flake should be opaque, internal temp 63°C.
- Blend mint, coriander, green chillies, ginger until smooth paste.
- Add lemon juice, salt, oil. Blend briefly.
- Heat oil at 150°C. Add mustard seeds (crackle 15 seconds).
- Add curry leaves, turmeric, cook 10 seconds.
- Add cooked rice, lemon juice, salt. Toss gently.
