👩‍🍳 How to make Saag Rice

  1. Blanch spinach 2 mins, cool, blend to smooth paste.
  2. Soak rice 30 mins. Heat ghee at 150°C. Add cumin seeds (crackle 15 seconds).
  3. Add bay leaf, onions, sauté 2 mins. Add ginger, green chillies, cook 30 seconds.
  4. Add spinach paste, sauté 2 mins. Add rinsed rice, sauté 2 mins.
  5. Add turmeric, salt, water. Bring to boil.
  6. Cover, cook at low heat (120°C) for 15-18 mins.
  7. Rice should be tender, green-coloured.
  8. Garnish with coriander.
