👩🍳 How to make Roti & Simple Sabzi Dinner
- Mix flour, salt. Add water gradually to make soft dough. Rest 15 mins.
- Divide into 8 portions. Roll into 6-inch rounds on lightly floured surface.
- Heat tawa to 180°C. Place roti, cook 30 seconds until bubbles form.
- Flip, cook 30 seconds. Flip again, apply ghee on top, flip back, apply ghee, press with cloth.
- Roti should puff up with light golden spots.
- Blanch spinach 2 mins, cool, chop finely.
- Heat oil at 150°C. Add cumin seeds (crackle 15 seconds).
- Add green chillies, ginger, cook 30 seconds. Add onions, sauté 2 mins.
- Add tomatoes, cook 3 mins. Add spinach, turmeric, salt.
- Cook 3-4 mins. Garnish with coriander.
