👩🍳 How to make Rajasthani Malpua with Rabri
- Crumble khoya finely. Mix with maida, condensed milk, baking powder, cardamom.
- Add enough water to make thick batter (like cake batter).
- Heat oil to 170°C. Drop 1 tbsp batter into oil.
- Deep fry for 2-3 mins until light golden on all sides. Remove with slotted spoon.
- Boil milk on high heat. Stir occasionally to prevent skin formation.
- Reduce to 3/4 volume (takes 15-20 mins). Milk should thicken and turn light brown.
- Add condensed milk, cardamom, saffron, dry fruits.
- Simmer for 5 mins more. Rabri should coat back of spoon.
