👩‍🍳 How to make Rajasthani Malpua with Rabri

  1. Crumble khoya finely. Mix with maida, condensed milk, baking powder, cardamom.
  2. Add enough water to make thick batter (like cake batter).
  3. Heat oil to 170°C. Drop 1 tbsp batter into oil.
  4. Deep fry for 2-3 mins until light golden on all sides. Remove with slotted spoon.
  5. Boil milk on high heat. Stir occasionally to prevent skin formation.
  6. Reduce to 3/4 volume (takes 15-20 mins). Milk should thicken and turn light brown.
  7. Add condensed milk, cardamom, saffron, dry fruits.
  8. Simmer for 5 mins more. Rabri should coat back of spoon.
