👩🍳 How to make Payasam
- Heat ghee at 150°C. Add dry fruits, fry 1 min. Remove.
- In same ghee, add vermicelli, roast 2 mins until light golden.
- Heat milk and condensed milk to 80°C. Pour gradually into roasted vermicelli.
- Keep stirring. Cook 8-10 mins at low heat.
- Add jaggery, cardamom, fried fruits, saffron, salt.
- Cook 3 mins more.
- Vermicelli should be soft, gravy creamy.
- Serve warm.
