👩🍳 How to make Nihari
- Heat oil at 160°C. Add 1/3 of onions, fry until deep golden. Remove (reserve for topping).
- Add remaining onions, sauté 4 mins. Add ginger, garlic, cook 2 mins.
- Add meat, sauté 5 mins. Add yogurt, mix well.
- Add red chilli, turmeric, coriander, cumin, cook 2 mins.
- Add cinnamon, bay leaves, cardamom. Add water, salt.
- Bring to boil, cover, reduce heat to low (120°C).
- Cook 40-45 mins until meat is tender. Gravy should be thick.
- Add garam masala. Top with fried onions, julienned ginger, coriander.
